It is the name of a rice variety, bred in Hyogo in the 1930s and known among brewers as the king of sake rice, because its large grains polish down cleanly to the starchy core that gives the finest bottles. Above it, a line in pale gray reads \u003cem\u003ehojun seishu\u003c\/em\u003e, mellow refined sake. Behind the brushwork, a red crest of interlocking swirls adds the single spot of color that lets the black strokes stand out.\u003c\/p\u003e\n\u003cp\u003eThe shade is a coated fabric stretched over a spiral frame, which gives the horizontal ribs of a paper chochin with far more resistance to moisture and handling. Two black caps close the top and bottom, and a ring at the top takes a hook or a cord. Unlit, the calligraphy reads sharply against the white ground. With a small bulb or LED inside, the whole shade glows and the characters turn into a silhouette.\u003c\/p\u003e\n\u003cp\u003eHang this sake lantern above a home bar, beside a shelf of bottles and cups, or at the entrance of a kitchen where friends gather. Restaurants and tasting rooms use it the way Japanese bars do, in a row with other lanterns over a counter.
